Chipotle Chile Sweet Taters

"This dish surprised us. We love sweet potatoes. But adding a chipotle chile pepper and adobo sauce to them just didn't sound appealing. But our taste buds changed our minds. Yum." - the Stevensons.

2 large sweet potatoes, peeled, cubed small
2 tablespoons unsalted butter
1 whole canned chipotle pepper in adobo sauce, chopped
1 teaspoon adobo sauce from the can of chipotle peppers
1/2 teaspoon salt

Place all the cubed sweet potatoes into a steamer basket and place steamer into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Steam for 20 minutes until the taters are fork tender. Add butter to potatoes and mash with potato masher or large fork. Add peppers, sauce, and salt and continue mashing to combine.

Serves 3-4.
